  1. Preheat oven to 350°. Lightly grease cookie sheet or i used parchment paper.
  2. Combine oil, br.sugar. Mix in pumpkin.Add the 2 eggs beating well. Add flour, salt, b.powder, b.soda, vanilla and spices.
  3. Drop by heaping teaspoonful. ( I used small cookie dipper) onto cookie sheet. Bake 10 to 12 minutes. Just check for doneness..
  4. Let them Cool. Make filling with last 5 ing. Beat egg white and mix with milk and vanilla. Add 1 cup p.sugar.mix well. Beat in shortening and remaining sugar. Beat until fluffy.( don't add pumpkin to this)..
  5. Take 2 cookies for top and bottom. Put about 1 tbsp. Filling on one. Put other one on lighly press them together. You are done. Fill them all that way….
  6. Done and ready to serve!

Combine flour, baking powder, baking soda, cinnamon, ginger and salt in medium bowl. Add eggs, one at a time, beating well after each addition. These pumpkin whoopie pies were extremely delicious! Easy and fun to make, a bit time consuming, but that was OK as these were truly a joy to create. This Thanksgiving I may prepare these the day before rather than pumpkin pie!
