  9. Take 8 medium Potatos (Washed and Quartered - Peeled optional)
  10. Prepare 1 dash Salt (to taste)
  11. Prepare 1/2 tsp Pepper (to taste)
  12. Prepare 1/2 cup Celery (Chopped into 1/2 inch pieces).
  13. Prepare 6 Carrots (Chopped into 2 inch pieces).
  14. Take 1 medium Sweet Purple Onion (Peeled and Quartered).
  15. Use 1 cup Hot Water
Steps to make BJ & Billy's Pot Roast:
  1. Gather and Prepare All ingrediants.
  2. Place a pat of butter in skillet and place Roast Beef into skillet
  3. Sear Roast Beef on each side untill lightly browned, then turn off heat.
  4. Place all ingrediants, including the seared Roast Beef, but not the Potatos or one (1) cup of Water, into crock pot.
  5. Cook on low heat about two (2) hours, stiring occationaly.
  6. Turn heat up to medium-low and Add the Potatos and one (1) cup of Water.
  7. Cook about three (3) hours or untill Roast is tender and Potatos are soft when forked, but do not fall apart (stiring occationally).
  8. Eat and Enjoy!
  9. Done and ready to serve!
