Dip the fish into batter to coat. Divide sliced sweet potatoes among baking sheets ensuring potatoes are not stacked. Brush both sides of sliced sweet potatoes with olive oil. Remove chips with crispy brown edges and continue baking other chips, checking constantly and removing as edges brown.

Steps to cook Hake, sweet potato chips and broccoli:
  1. Cut the sweet potatoes up into chips (however you like them) ; clean hake and let it dry on some paper towels. Wash broccoli
  2. Steam sweet potatoes for 10mins or until slightly soft- If you have a steamer (or boil to till slightly soft). Going to add these to oil to get crispy after, so don’t let it get too soft (don’t turn off steamer as you can add broccoli after taking potatoes out- then steam broccoli for 5mins)
  3. Take potatoes out and add broccoli into steamer (steam for 5mins). Then take sweet potatoes and add to hot pan of oil (put enough oil in pan that it can half deep fry). Make sure oil is hot before putting in. Let potatoes fry till you can see it getting crispy on the out side. When done take out and put on paper towel to mop up excess oil
  4. Add butter to pan and cook hake. I like just butter and lemon when cooking fish. Can make a batter if you want but I was in a rush. Cooked for only a couple minutes
  5. Plate all. Drizzle some olive oil and salt and pepper over broccoli and fish. Eat!
  6. Done and ready to serve!
