Ingredients and seasonings used in make
  1. Use 1 Kg Chicken
  2. Use 4-5 Bay Leaves
  3. Use 2 Cinnamon Sticks
  4. Take 1/2 tsp Black Pepper
  5. Use 7-8 Onions- Sliced
  6. Prepare 2 Large Tomatoes - Puree
  7. Take 2 tbsp Ginger Garlic Paste
  8. Use as required Mustard Oil
  9. Prepare to Taste Salt
  10. Use 1/2 tsp Turmeric Powder
  11. Prepare 1/2 tsp Red Chilli Powder
  12. Prepare 1 tsp Coriander Powder
  13. Prepare 2 Green Chilli - Chopped
  14. Prepare 3-4 Dry Red Chilli
  15. Prepare 1 tsp Garam Masala
  16. Prepare 3 tbsp Curd
  17. Prepare 1 tbsp Kasuri Methi - Crushed

Stir well and then add the yoghurt, crushed dry fenugreek leaves and green chillies. Remove the chicken from pan and keep it aside. Add salt, garlic and ginger paste, red chilli, cumin powder,coriander powder and turmeric. Apply the turmeric (½ tsp), ginger and garlic pastes along with some salt to the chicken.

Step by step to make Dhaba style spicy chicken:
  1. Heat mustard oil in a cooker. Add bay leaves, cinnamon & black pepper. Saute for few seconds.
  2. Add sliced onions. Cook at high to medium flame till turn golden brown.
  3. Add ginger garlic paste. Cook for 2 minutes.
  4. Add chicken & cook at high flame for 3-4 mins.
  5. Add tomato puree, salt, red chilli powder, turmeric powder, coriander powder, dry red chilli & green chilli. Mix properly. Cook for 2 minutes.
  6. Add 1 cup water & cook for 1 whistle. Open the lid when pressure cools down.
  7. Now cook at low flame till the gravy dries completely & the chicken is perfectly cooked.
  8. Add curd in between by keeping low flame. Ensure the curd is not very cold.
  9. Add garam masala & Kasuri Methi. Cook for a minute & serve hot.
  10. Done and ready to serve!

Add this paste to chicken and mix well. Adjust salt according to your taste. You can add more water if you want more gravy. If you want to make a thick gravy, add little water. When the water thickens, put the pan off the flame.
