  1. Prepare 1 lb chuck roast, cut in 1" cubes
  2. Use 2 T chickpea or coconut flour
  3. Prepare 2 T EVOO
  4. Prepare 1 quart beef stock
  5. Use 1 bag (16 oz) frozen veggies, broccoli/cauliflower/carrots
  6. Prepare 2 tsp Italian seasoning
  7. Prepare 1 tsp ground black pepper
  8. Prepare 1/2 tsp sea salt
  9. Prepare 1/4 c dry red wine
  10. Prepare 3 T tomato paste

Stir in carrots, potatoes and celery. Remove the beef from the pot and add the vinegar and wine. Cook over medium-high heat, scraping the pan with a wooden spoon to loosen any browned bits. Add the beef, beef broth and bay leaves.

How to make:process Beef Stew:
  1. In large resealable plastic bag, combine beef and flour. Shake well until beef is covered.
  2. In large pan, heat oil. Cook beef until browned on all sides.
  3. Add stock, veggies, seasoning, salt, pepper and wine and bring to boil. Reduce heat and simmer and cook 10 min.
  4. Add tomato paste and cook 5 min. or until thickened.
  5. Done and ready to serve!

Bring to a boil, then reduce to a slow simmer. Repeat procedure with remaining oil and beef. Add the salt and pepper as the beef browns. Once browned, remove the beef with a slotted spoon or tongs and set aside. Reduce heat to medium-low and add the flour.
