Ingredients and seasonings required in make
  1. Prepare 1 cup flour
  2. Use 1 cup butter
  3. Take 1 cup diced onions

  7. Prepare 1 can stewed tomatoes

Add the turkey and sliced sausage to the gumbo. Remove bacon from pan with a slotted spoon. Remove carcass from stock; set stock aside. Remove any meat remaining on bones; discard bones.

Instructions to make Turkey and sausage gumbo:
  1. Melt 1 cup of butter in 5 quart saucepan.
  2. Slowly and in 1 cup of flour to melted butter on medium low heat. Cook for 15 minutes until your roux is a dark chocolate color. Careful not to burn your roux. ( Or use a gumbo base of your choice)
  3. Stir in onion, bell pepper, celery, red pepper flakes, crab boil and hot sauce to your roux.
  4. Slowly stir in chicken stock.
  5. Add all meat and vegetables and simmer on medium low heat for 1 1/2 hours.
  6. Done and ready to serve!

Chop meat into bite-size pieces, and combine with chopped turkey; cover and refrigerate. Add the flour and stir constantly until the roux starts to become a light brown color. When you reach the desired color, add onions, peppers and celery to the roux and mix well. Cook for a few minutes, adding the turkey stock and stirring at the same time, mixing well. Add okra, bay leaves, oregano, basil, diced tomatoes and mix well.
