  1. Use 2 1/2 cups flour
  2. Prepare 1 1/2 cup sugar
  3. Prepare 1 tsp baking soda
  4. Prepare 1 tsp baking powder
  5. Take 1/2 tsp salt
  6. Prepare 1 tsp cocoa powder
  7. Prepare Red food color
  8. Use 2 eggs
  9. Prepare 1 cup buttermilk
  10. Prepare 1 1/2 cup vegetable oil
  11. Prepare 1 tsp vanilla
  12. Take 1 tsp vinegar

Beat in eggs, one at a time. In a medium mixing bowl, sift together the flour, sugar, baking soda, salt and cocoa powder. In a large bowl gently beat together the oil, buttermilk, eggs, food coloring, vinegar and vanilla with a handheld electric mixer. Line standard muffin tins with paper liners.

  1. Mix all the dry ingredients in a large bowl. Mix all the wet ingredients in a jug or anothe bowl. Combine the two to form a smooth and consistent batter
  2. . Line your cupcake tins with 110mm cupcake liners.
  3. Fill the liners 3/4 ways full. Bake in a 350°F or 180°C preheated oven for around 20 minutes depending on your oven.
