In large bowl (I use the largest stainless steel bowl I own) combine bread crumbs, cornbread.
Incorporating it into a skillet cornbread lets it shine. Stir in sage, pepper, and salt. Stir celery mixture and bread cubes into crumbled cornbread in bowl, stirring gently until blended. Add chicken broth and eggs, and gently stir until moistened. In a large bowl, whisk together the cornmeal, flour, fresh chopped sage, and minced green onion (if using).
