  20. Prepare 3 tbsp fresh parsley, chopped

  22. Take 1 1/4 cup canola oil
  23. Use 1 1/2 cup all purpose flour
  24. Use 1 1/2 tsp cajun seasoning

Add flour, and whisk vigorously until combined. Remove from heat, and set aside. In a large Dutch oven over medium-high heat, add canola oil. Add remaining oil to the same pan; stir in flour until blended.

  10. Once roux is finished, slowly add it to your gumbo pot and continue to stir occasionally for another hour.
  11. Serve over hot cooked rice with gumbo file if desired.
  12. Done and ready to serve!
