  1. Prepare for the Roast
  2. Prepare 3 lb beef pot roast
  3. Prepare 1/2 cup flour
  4. Take 2 tsp Kosher salt
  5. Prepare 1/4 tsp pepper
  6. Use 1 1/4 tbsp minced garlic
  7. Prepare 1 tsp fresh thyme
  8. Use 1/2 tsp dried oregano
  9. Prepare in the crock pot
  10. Use 4 Carrots
  11. Take 3 potatoes, quartered
  12. Use 2 sweet onions, sliced
  13. Prepare 3 stick celery
  14. Use 8 oz mushrooms, whole and washed
  15. Take 1 1/4 cup beef broth

  1. Coat roast with flour, salt, pepper, thyme, oregano, & garlic.

  9. Done and ready to serve!

When roast is browned, remove from pan and set on a plate. Add the garlic and carrots to sit on top of the onions. Add the roast and simmer: Set the roast on top of the onions, garlic and carrots. Add the bay leaf and cover. Generously salt and pepper your chuck roast.
