How to make Lessened-Anxiety Pot Roast (InstantPot):

- Add the tomato paste, beef stock, and water to the pot, and stir until incorporated. Then add the browned beef, diced potatoes (about the size of the beef cuts), and halved baby carrots to the pot. Try to make sure not to overfill the pot, but if you do, it’s fine. (I always do)
- Add the wine, worchestershire sauce, salt, pepper, bay leaves (can add sprigs of Rosemary and thyme). Lock IntantPot lid on, pressure cook on high for 40 minutes.
- Sit or pace back and forth worrying about when the pot is going to pressurize for almost 10 minutes (or longer if you are at higher elevation; InstantPot takes longer to pressurize with thinner air). When you finally see the pressure indicator pop up, go relax with a cup of that red wine, and open Duolingo because you haven’t in a while.
- When pressure cooking is done, leave to sit for 5 minutes before quick releasing the steam (cover quick release in towel so that liquid doesn’t spray out). Open and immediately add some ice to stop the cooking (not to much to turn it into an InstantCool).
